Ingredients
1 large onion, chopped
4 chicken breasts, diced into chunks
200g chorizo sausage, sliced
1-2 tsp chilli powder
2x tins chopped tomatoes
250ml/½ pint chicken stock
2x cloves garlic, crushed or chopped
tbsp tomato puree
450g/1lb approx potatoes (whole small new potatoes, or large potatoes chopped into chunks)
Large handful of pitted black olives
Soured cream (optional)
Fresh coriander (optional)
Instructions
1. Fry onion until soft and golden
2. Add chicken and cook for a couple of minutes each side
3. Meanwhile cut the chorizo into chunks and add to pot. Fry for 2-3 minutes until the juices start coming out. At this point you may want to add some chilli powder to however hot you like it
4. Add tomatoes, stock, tomato puree, garlic & a dash of red wine if there's some open!
5.Add potatoes, cover pan and simmer for about 30-40 mins, or until potatoes and chicken are almost cooked
6. About 10 mins towards end of cooking add black olives
7. Top with soured cream and fresh coriander
8. Serve with crusty bread drizzled with olive oil
I made this, this afternoon but halfway through cooking, I realised I had no tomatoes! Soo, I cooked some onions, added chorizo, then added chicken, then hot chilli powder, black pepper, chicken stock, tomato puree, red pesto, sweetcorn, sliced mushrooms and at the end, cooked rice. DS1 LOVED IT and ate 2 platefuls, he never does that
Made this today, delicious!! It served 4 easily, with some left over for another day or the freezer. Would recommend.

2 tablespoons vegetable oil
1 pound boneless pork shoulder, trimmed, cut into 1-inch cubes
Salt
2 15-oz. cans hominy, rinsed and drained
1 16-oz. jar salsa verde
2 cups low-sodium chicken broth
1 4-oz. can diced chiles
1 medium onion, finely chopped
5 cloves garlic, minced
1 tablespoon cumin
1 teaspoon dried oregano
Chopped avocado, sliced radishes, chopped cilantro, lime wedges and sour cream, for serving, optional
Preparation
1. Warm oil in a skillet over medium-high heat. Season pork with salt. Working in batches, brown pork on all sides, 6 to 8 minutes. Transfer to slow cooker.
2. Stir hominy, salsa, broth, chiles, onion, garlic, cumin, oregano and 1/2 tsp. salt into slow cooker. Cover; cook on low until pork is tender, 4 1/2 to 5 hours. Serve hot, with avocado, radishes, cilantro, lime wedges and sour cream on the side, if desired.
