It is that time of year, the kids are going back to school and that means lazy summer evenings pass away to a bit more hectic schedule.
At our house the hours between 3:30 (when the kids get home from school) and 8:00 (when they go to bed) is what we call “Crunch Time”. It is just pure craziness. The kids are all getting home and are wound for sound with exciting stories to tell me about their day. They are hungry for a snack and then it is time for homework and getting dinner ready.
The crew gets fed and then we have our daily chores and then we start winding down for the day with baths and showers, hunting, gathering up outfits for the next day, unwinding maybe with a little TV or iPad time and then off to bed.
Without a plan in place this time of the day is a bit crazy and one of the most stressful parts of the day (other than mornings, my 11 year son Parker who has Autisim HATES mornings, and I am not exactly a morning person either!)
One of the ways I alleviate the stress for this crazy part of the day is meal planning and utilizing the crock-pot as much as possible.
Meal planning is important because it allows me to be organized about what I am making on each day and while grocery shopping. It sure is easier to get everything I need at the grocery store in one trip versus making several trips to the market for forgotten ingredients. And that saves me money too.
25 Easy Back To School Crock-Pot Meals using my slow cooker is super helpful too because instead of me rushing around the kitchen with kids underfoot and needing my attention while I am trying to cook, I can instead get my prep work done either the night before after they go to bed or in the morning after they hop on the bus. And frankly that works better for me because I am a night owl so prepping at night works for me, or in the morning after I have a couple of cups of coffee in me…yep just a more productive person overall!
And the, I can give my kids my full attention with homework and snacks and whatever else they need instead of feeling crazy!

Ingredients
1 Lb. lean ground beef or ground turkey
1/2 cup finely diced onion
1 teaspoon minced garlic
3/4 cups yellow cornmeal
1 egg
1 1/2 cups milk
1 (15.25 oz.) can corn, drained
1 (14.5 oz.) can diced tomatoes, undrained
1 (1.25 oz.) envelope taco seasoning mix
1 (2.25 oz.) can sliced black olives, drained
1 Cup shredded cheddar cheese
Minced green onion, for garnish (optional)
Instructions
In a large skillet brown and crumble your ground beef with the onion and garlic until the meat is no longer pink.
Drain ground beef to remove excess fat.
In a large bowl combine cornmeal, egg and milk and mix until smooth
Add to the cornmeal mixture the corn, tomatoes, taco seasoning, olives and ground beef mixture and mix well.
Dump mixture into the bottom of a 4 quart crock-pot.
Cover and cook on LOW for 6 hours or HIGH for 3 hours.
Sprinkle with cheese and cover again and cook for an additional 15 minutes until cheese is melted.
To serve, spoon into bowls or onto plate and garnish with chopped green onion.

Ingredients

3 chicken breasts
Chicken Flavored Rice
Cream of Celery Soup
Low Fat Cream of Mushroom Soup
1 c water
salt (optional)

Directions

Put rice in crock pot w/ water. Combine soups and layer on top of rice. Salt chicken & layer chicken in crock pot. Set on high for 4-5 hours or low or autoshift for 7-10 hours.

Ingredients

chicken breast, boneless, skinless, 6oz.
black beans, no salt added, 15oz can
pinto beans, no salt added, 15oz can
corn, no salt added, 15oz can
tomatoes, diced, no salt added, 15oz can
tomato sauce, no salt added, 8oz can
brown rice, 1 cup, uncooked
water, 1 cup
McCormick Salt Free All-Purpose Seasoning, 1 tsp (or use your own seasonings)
black pepper, 1/2 tsp

Directions

Cut chicken breasts (or tenders) into 1/2 inch cubes (I use kitchen shears).

Drain and rinse black beans, pinto beans, and corn.

Place all ingredients in Crock Pot and stir.

Cook on High 2 hours.

Stir.

Cook on High an additional 1 to 2 hours, or until chicken is cooked.

Ingredients

1 lb. baby carrots - or 4 carrots cleaned and sliced into chunks
1 med onion, cut into wedges
6 boneless, skinless chicken breast halves
20-oz. canned pineapple chunks
1/3 c packed brown sugar
1 Tbsp. low-sodium soy sauce
2 tsp. chicken boullion granules
1/2 tsp salt
1/2 tsp ground ginger
1/4 tsp garlic powder
3 Tbsp cornstarch
1/4 c water
3 cups cooked long grain rice- I used brown rice


Directions

Layer the carrots and onion in the bottom of the crock pot
Top with chicken
Drain pineapple, reserving the juice. place on top of chicken
Mix together the juice, brown sugar, soy sauce, chicken bouillon, salt, ginger, and garlic. pour over the top.
Cook on low 6-7 hours
Combine cornstarch and water.
gradually stir into slow cooker
Cook 30 minutes longer or until sauce is thickened
Serve over cooked rice.
Makes 6 servings of 1/2 cup rice and 1 piece of chicken with 1/2 c sauce.

Wouldn’t it be nice if you could come home to a luau in your crock pot .My favorite food at any Hawaiian luau is the roasted pork. It is so smoky and juicy. I have been trying to replicate that flavor at home in my crock pot. But was not quite successful, until I found this particular brand of Hawaiian black lava sea salt.

I also used some hickory smoked natural, nitrate free  bacon, minced garlic and natural liquid smoke (optional). Find a  brand of hickory liquid smoke that has no chemicals, msg, or additives. One that just contains liquid smoke. But the recipe does not need it, if you are unsure about using it. The black lava sea salt and bacon add enough smoke accents. I just like the extra  smoke flavor in mine.

Place bacon and garlic on the bottom of  crock pot. poke holes in roast with knife and rub with black lava sea salt. Place roast in crock pot, and add optional liquid smoke. Cover and cook on high for 4 to 6 hours. Turn to low and cook  for 2 hours. Pull pork apart with fork (should fall apart easily if done) and stir. Can add some shredded cabbage if desired. Cover and cook on low for 30 minutes. Or could cook on low for 8 to 10 hours.

Ingredients:
3 lb pork roast (shoulder or butt)
4 slices Bacon, hickory smoked and nitrate free.
1 1/2 tbsp Hawaiian black lava sea salt * could use Hawaiian red sea salt too, but the black has a smoked taste due to activated coconut- shell charcoal, can also use pink sea salt as well.
5 to 6 cloves garlic, minced.
2 tbsp hickory liquid smoke (all natural kind, with smoke as the only ingredient, * optional, can omit.
Cauli Rice:

3 cups cauliflower.
2 tbsp organic or homemade chicken broth.
¼ tsp garlic powder.
1/8 tsp sea salt.
Directions:
Set crock pot to high setting, and line the bottom of crock pot with the raw bacon slices. Sprinkle minced garlic over the top of bacon.
Trim a little fat off bottom of roast if desired.
With a sharp knife, poke and stab holes all over and through the roast .
Pour 1 1/2  tbsp of black lava sea salt into small pinch bowl and use fingers to rub salt all over roast (will be a charcoal mess on your hands, but it washes off easily).
Place roast, fat side down into crock pot. Add optional liquid smoke over top of roast, and cover crock pot. Cook on high for 4 to 6 hours ( longer time for bone in roast), then on low for 2 hours. Could also cook on low for 8 hours to 10 hours, (if your roast has a bone in it , then it will need 8 to 10). Once cooking time is up, take a fork and pull apart roast in crock pot (it should fall apart easily if done). Stir shredded pork and bacon in crock pot and cover. Cook on low for 30 minutes.
If you choose to make the cauliflower rice, now is the time to start making it. Steam cauliflower for 20 minutes, or microwave for 5 minutes. Put slightly cooled cauliflower into food processor and add chicken broth, garlic, and sea salt.
Process until rice texture forms.
Place a scoop of the cauli rice onto a plate and add a scoop of shredded luau pork.
Serve and enjoy.

A little while ago, I went for a walk with a friend of mine who brought up one of her husband’s favorite meals – Skyline Cincinnati Chili. Although I’ve never eaten authentic Skyline Cincinnati Chili, I made a version of it a few years ago and the kids seemed to like it, so this time around, I reached out to friends and followers on Twitter and Facebook and asked for their favorite recipes.
There are some spices that everyone seems to agree goes into Cincinnati Chili, like chili powder, cinnamon and allspice. Then there’s the unsweetened chocolate or cocoa that gives the chili a nice deep richness, and vinegar to give it some tang. Some recipes use tomato sauce, others use tomato paste. Some people add ground cloves. One friend suggested adding some vanilla. Cayenne or black pepper also add some heat. One recipe added some steak sauce, another used barbeque sauce, and others use Worcestershire sauce. As for the cooking method, some recipes called for browning the meat first, others said that was a big no-no – that the meat should be cooked in water to give it a softer texture. Most people agreed that the key to an authentic Cincinnati Chili was the texture of the meat – it should not be chunky, but should be fine.

So, off I went to take all the bits and pieces that I picked up from different recipes to come up with my East Coast rendition. Although traditionally, Cincinnati Chili is served over pasta with optional toppings of warm Red Kidney Beans, Onions and Shredded Cheese, I decided to throw the beans in with the chili because I wanted to make sure my kids didn’t opt-out of this topping. I broke with tradition the first time I made this, using ground chicken instead of beef. To get the fine texture that everyone was talking about, I cooked the ground chicken in water first, then pulsed it in my food processor a few times before adding all the spices and sauces. Since this chili needs to be cooked for a long time, I let it simmer away in my crock pot all day for the flavors to develop. The second time I made this, I used organic lean beef (90%) and did not need to pulse it in the food processor. Although the original Skyline Chili is high in fat and calories (I’m guessing the beef used is higher in fat and the fat may not be strained off; also, pictures I’ve seen of Skyline Chili are piled high with cheese), this version is a lighter version. Not only did I use leaner cuts of meat, but I strained the juices off after cooking the meat, leaving behind most of the fat. In addition, by using extra extra sharp cheddar cheese (from Trader Joe’s), which packs a lot of flavor into a smaller portion, you can use less and still get that intense cheddar flavor. I shredded my own cheese using a fine shredded disk on my food processor (so much better than the pre-shredded cheese you buy from the store). Of course, portion size plays a big part as well, so I was also mindful of the amount of pasta I served this with (the kids got bigger portions). According to Calorie Count, one serving of 5-way Skyline Cincinnati Chili has 790 calories, and is not only high in fat, but extremely high in sodium too. By watching portion sizes, using leaner cuts of meat and serving the chili with a modest amount of cheese, you can substantially improve the nutritional profile of this popular chili dish. Skyline Cincinnati Chili Nutrition One serving of this skinnied down Cincinnati Chili made with ground chicken and served with 1 cup cooked gluten-free pasta and 2 tablespoons shredded cheddar cheese has 540 calories, 14.6 grams fat, 4.9 grams saturated fat, and 767 mg sodium. If you like more cheese, just know that doubling the amount of cheese per serving to 1/4 cup will add 50 more calories, 3 grams fat, and 90 mg sodium. Made with 90% lean ground beef, one serving would have 600 calories, 100 calories less than if you use 75% ground beef. Ingredients
2 cups water
1 pound ground chicken, turkey or lean (90%) beef
1 medium onion, finely chopped
2 garlic cloves, minced
2 tablespoons chili powder
¼ teaspoon ground allspice
½ teaspoon cayenne pepper
½ teaspoon ground cumin
½ teaspoon ground cinnamon
1½ tablespoon unsweetened cocoa
1 bay leaf
3 tablespoons tomato paste
1 cup tomato sauce
1 tablespoon cider vinegar
1 teaspoon Worcestershire sauce
½ teaspoon salt
1 cup water
1½ cups cooked kidney beans, rinsed and drained
To Serve
Cooked spaghetti (gluten-free or whole grain)
chopped onions
2-4 ounces shredded low-fat sharp Cheddar cheese
Directions
Place water and ground chicken in a large pot. Stir to break up pieces. Bring to a boil, then reduce heat and cook on low for 30 minutes. Strain chicken and place cooked meat in bowl of food processor. Pulse until texture is fine (you do not need to pulse the meat if you use beef unless it is lumpy). Place mixture in crockpot with remaining ingredients. Cook on low for 6 hours. If desired, add beans to chili and cook another 30 minutes to warm through. You can also leave out the beans and use them as a topping when served, which is the traditional way to serve it.
To serve, spoon chili on top of cooked pasta. Top with onions and cheese.
